Karachi Matka Biryani Recipe (Clay Pot Biryani)

Earthy aroma. Moist rice. Served in the pot.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

A clay matka gives biryani a soft, earthy aroma and keeps every grain moist, but an unprepared pot can crack on the flame or soak up all the liquid. This recipe shows how to season the matka, layer a Karachi chicken masala inside it and finish the dum gently in the oven or on a tawa.

The 3 laws of matka biryani

Why this recipe works

Soak

A dry pot

Soak the matka 30 minutes so the clay does not drink the masala.

Gentle

Direct high flame

Clay cracks on sudden heat. Use a tawa, or bake at 180°C.

Moist

A dry masala

Leave the masala slightly saucy. Clay absorbs some moisture.

Quick answers

Matka biryani FAQ

Why soak a clay pot before cooking?

A dry clay pot absorbs moisture from the food and can crack with sudden heat. Soaking for 30 minutes protects both the pot and the biryani.

Can I cook matka biryani on a gas stove?

Yes, but place a heavy tawa between the flame and the pot and keep the heat low. The oven at 180°C is the safer method.

How do I season a new matka?

Soak it, rub the inside with oil and heat it empty on a tawa for 10 minutes before the first use.

What does a clay pot add to biryani?

Clay releases steam slowly and adds a gentle earthy aroma, giving moist rice and a smoky, rustic flavour.
