Dum Cooking: How to Steam Biryani and Pulao the Right Way

How to give dum
- Layer parboiled rice over the masala, drizzle saffron milk and ghee.
- Seal the pot with dough or foil and lid.
- Cook on high for 3 minutes to build steam.
- Place a tawa underneath, lower the heat and cook 15 to 25 minutes.
- Rest 5 minutes before opening and gently mixing.
Checking
How to know dum is done
Steam escaping from the seal and a strong aroma are the signs. When you open the pot, the top rice should be fully cooked and separate, and the bottom masala thick, not watery.

- Top rice hard: sprinkle hot water, reseal and dum 10 more minutes.
- Bottom burnt: always use a tawa and low heat.
- Wet, mushy rice: rice was overboiled before layering; drain at 70 percent cooked.
