Pakistani Chicken Biryani Recipe

The 3 laws of biryani

Why this recipe works

70%

Fully boiled rice

Drain at 70% so steam finishes the grain.

Oil up

Watery masala

Reduce until oil floats. Water is what makes rice mushy.

15 min

Long dum

Seal tight, lowest flame, 15 minutes. Longer dries the chicken.

Method · 4 stages

Step by step

1

Fry the onions

Medium-high · 12 to 15 min
  1. Heat the oil and add sliced onions, stirring every minute.
  2. Lift out half when deep golden and keep for garnish.
Look for: golden, one shade lighter than you want. They keep darkening in hot oil.

2

Build the masala

Medium, then high · 20 min
  1. Cook ginger garlic paste 1 minute, add chicken and salt, sear on high 5 minutes.
  2. Add tomatoes and powdered spices, cook 5 to 6 minutes.
  3. Lower the heat, stir in yoghurt, then add potatoes, aloo bukhara and chillies. Cover 15 minutes.
  4. Uncover on high and reduce. Stir in garam masala.
Look for: oil floating on top and a thick masala that clings to the chicken.
20:00
3

Boil the rice to 70%

High, uncovered · 6 to 8 min
  1. Boil 4 litres of salted water with whole spices.
  2. Add the drained rice. Start testing at 6 minutes with the gauge above.
  3. Drain the moment it breaks in 3. Do not rinse.
Look for: grains doubled in length, a tiny firm dot in the centre.

4

Layer and dum

High 3 min, then lowest on a tawa · 18 min
  1. Spread masala, then half the herbs and fried onions.
  2. Add rice loosely. Drizzle saffron milk, kewra and ghee, top with remaining herbs and onions.
  3. Seal the lid. High 3 minutes, then lowest heat on a tawa for 15 minutes. Rest 5 minutes.
Look for: steam escaping at the rim before you lower the heat.

How we tested this recipe

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities on this page, in both metric and US cup measures.
  • Every stage was timed at the stove; the heat levels and cues are what we saw in the pot.
  • The rice boil gauge and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Dum timing was checked on a regular home burner with a tawa underneath.

Quick answers

Chicken biryani FAQ

How long should I soak basmati rice for biryani?

30 minutes. Longer soaking makes the grains fragile and more likely to break.

Can I make chicken biryani without yoghurt?

Yes. Use 2 extra tomatoes and 1 tbsp lemon juice, and marinate the chicken in lemon and spices for 30 minutes first.

What is the difference between biryani and pulao?

Biryani layers part-cooked rice over a separately cooked masala and finishes on dum. Pulao cooks rice and meat together in one stock.

Can I use boneless chicken?

Yes, but cut the covered cooking in Stage 2 to 8 minutes so it stays juicy.
