How to Fry Onions for Biryani (Crispy Birista)

Birista is thinly sliced onion fried until deep golden and crisp. It flavours biryani, korma and pulao and is layered on top for sweetness and crunch. Onions burn fast at the end, so the key is even slicing, medium heat and lifting them out one shade before you want them.

How to make birista step by step
- Slice onions evenly about 2 mm thick, with the grain.
- Optional: toss with 1 tbsp cornflour for extra crispness.
- Heat 1 cup oil on medium-high and add onions in a single layer.
- Stir every minute. Lower the heat once they turn golden.
- Lift out at deep golden and spread on paper to crisp as they cool.

- Cool completely, then store airtight.
- Fridge up to 1 month, freezer up to 3 months.
- Re-crisp in a dry pan for 1 minute if they soften.
