Karachi-Style Mutton Biryani Recipe

Soft mutton. No smell. Fluffy rice.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Home mutton biryani usually fails because the meat is still tough when the rice is ready. This recipe tenderises the mutton completely first, so the dum only has to marry the flavours.

Method · 5 stages

Step by step

1

Marinate the mutton

No heat · 2 hours
  1. Mix all marinade ingredients into the mutton until every piece is coated.
  2. Cover and rest 2 hours, or overnight in the fridge without the papaya.
Look for: the yoghurt clinging thickly to each piece, not pooling.

2

Kill the smell and tenderise

Medium, then pressure · 35 min
  1. Fry sliced ginger, cloves, cinnamon and black cardamom in oil for 30 seconds.
  2. Add the mutton and cook on high 8 to 10 minutes until the yoghurt water reduces.
  3. Add ½ cup water and pressure cook 6 to 7 whistles on medium.
Look for: meat that pulls away from the bone. Use the gauge above.
35:00
3

Finish the masala

High, uncovered · 12 min
  1. Add tomatoes, fried potatoes, aloo bukhara and green chillies.
  2. Cook until the tomatoes melt and the oil rises. Stir in garam masala.
Look for: a thick masala coating the meat with oil on the surface.
12:00
4

Boil the rice to 70%

High, uncovered · 6 to 8 min
  1. Boil salted, spiced water and add the drained rice.
  2. From 6 minutes, press a grain. Drain when it breaks into 3 with a firm centre.
Look for: long grains with a tiny firm dot in the middle.
07:00
5

Layer and dum

High 3 min, then lowest on a tawa · 18 min
  1. Spread mutton masala, then half the herbs and onions.
  2. Add rice loosely, then saffron milk, kewra, ghee and the rest of the herbs.
  3. Seal, high 3 minutes, then lowest heat on a tawa 15 minutes. Rest 5 minutes.
Look for: steam escaping at the rim before you lower the heat.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities on this page, in both metric and US cup measures.
  • Every stage was timed at the stove; the heat levels and cues are what we saw in the pot.
  • The rice and mutton gauges and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Dum timing was checked on a regular home burner with a tawa underneath.

Quick answers

Mutton biryani FAQ

Which cut of mutton is best for biryani?

Shoulder and leg pieces with bone. They stay juicy through dum and give a richer masala than boneless meat.

How long should mutton cook before layering?

About 25 minutes in a pressure cooker or 60 to 75 minutes in a pot, until it pulls cleanly from the bone.

Can I make mutton biryani without a pressure cooker?

Yes. Simmer covered on low heat for 60 to 75 minutes with ½ cup water before finishing the masala.

Is mutton biryani the same as lamb biryani?

In Pakistan, mutton means goat. Lamb works with this recipe and cooks about 15 minutes faster, with a milder flavour.
