Karachi Nalli Biryani Recipe (Beef Bone Marrow)

Melting marrow. Soft shank. Spicy Karachi masala.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

The whole point of nalli biryani is the marrow, and most home versions lose it: the marrow melts out of the bones and disappears into the oil. This recipe seals the bone ends, cooks the shank slowly so the marrow sets soft inside, and builds a spicy Karachi masala that the marrow enriches at the table.
