Prawn Biryani Recipe (Juicy Karachi Jhinga Biryani)

Juicy prawns. Tangy masala. Never rubbery.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Prawns cook in about 3 minutes, so cooking them like chicken leaves them shrunken and rubbery after dum. This recipe sears the prawns briefly, takes them out, builds the masala without them, and folds them back in only at layering so they finish gently in the steam.

How we tested this recipe

Tested in a home kitchen, not a studio

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (are the prawns seared enough) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.

Quick answers

Prawn biryani FAQ

How do I keep prawns soft in biryani?

Sear them for 2 minutes, remove them, and fold them back in only when layering. The short dum finishes them gently.

Can I use frozen prawns for biryani?

Yes. Thaw fully, rinse and pat dry before marinating so they sear instead of stewing.

How long should prawn biryani dum be?

About 10 to 12 minutes is enough. Longer dum makes prawns tough.

Which prawns are best for biryani?

Large or king prawns, peeled and deveined, with the tail left on for presentation if you like.
