Moti Biryani Recipe (Pearl Kofta Biryani)

Tiny pearls. Juicy bite. Party-ready rice.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Moti means pearl: dozens of tiny koftas scattered through the rice like jewels. Tiny koftas dry out and break easily, so this recipe uses a smooth, well-kneaded mince, rolls them with oiled hands and sets them with a quick shallow fry before a short simmer.

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 5 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (how big should each moti be) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.

Moti biryani FAQ

What does moti mean in moti biryani?

Moti means pearl. The dish is named after the tiny pearl-sized koftas scattered through the rice.

How small should moti koftas be?

About 1.5 cm, the size of a marble. Smaller ones dry out and larger ones become kofta biryani.

Do I need to fry the moti?

A quick 2-minute shallow fry sets them so they stay round in the gravy. It is highly recommended.

Can I make moti biryani ahead?

Yes. Roll and fry the pearls a day ahead and keep them in the fridge, then make the gravy and rice fresh.
