The NineFoods kachchi rice gauge

Kachchi rice drains much earlier

For kachchi, the rice gets a full hour of steam. Press a grain and tap the match.

Tap a grain to see what to do.

Method · 4 stages

Step by step

1

Marinate overnight, then rest

No heat · overnight + 60 min
  1. Mix every marinade ingredient with the mutton in the cooking pot itself and refrigerate overnight.
  2. Take the pot out 1 hour before cooking. Use the timer for this rest.
Look for: meat at room temperature, not fridge-cold, before the pot goes on the heat.

2

Boil the rice to 30%

High · 4 to 5 min only
  1. Boil the water fiercely with salt and whole spices.
  2. Add the drained rice and boil 4 to 5 minutes. Check with the gauge above.
  3. Drain and keep 1 cup of the hot rice water.
Look for: grains that bend but do not break, still white in the middle.

3

Layer, seal and dum on high

High · 10 min
  1. Spread the meat in one layer. Add rice loosely on top.
  2. Drizzle saffron milk, ghee and kewra. Add fried onions, mint and ½ cup rice water around the edges.
  3. Seal the lid with a dough rope and cook on high.
Look for: the sound of gravy bubbling inside the sealed pot.
10:00
4

Low dum and rest

Lowest on a tawa · 50 min + 10 min rest
  1. Slide a heavy tawa under the pot and cook on the lowest heat for 50 minutes.
  2. Turn off the heat and rest 10 minutes before breaking the seal.
  3. Serve by digging straight down so every plate gets meat and rice.
Look for: no smell of burning. A faint toasty smell near the end is normal.

Why

Home stoves cannot reach deg heat.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities on this page, in both metric and US cup measures.
  • Every stage was timed at the stove; the heat levels and cues are what we saw in the pot.
  • The rice boil gauge and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Dum timing was checked on a regular home burner with a tawa underneath.

Quick answers

Hyderabadi dum biryani FAQ

What is the difference between kachchi and pakki biryani?

Kachchi layers raw marinated meat with part-boiled rice and cooks both together on dum. Pakki cooks the meat masala first and only finishes it with the rice.

How long should Hyderabadi biryani cook on dum?

About 60 minutes: 10 minutes on high, 50 minutes on the lowest heat over a tawa, then a 10 minute rest.

Can I make Hyderabadi dum biryani with chicken?

Yes. Marinate bone-in chicken 4 hours, boil the rice to 50% and cut the low-heat dum to 30 minutes.

Why is it called dum biryani?

Dum means to breathe or steam. The sealed pot traps steam that cooks the meat and rice slowly in their own aroma.
