Lucknowi Biryani Recipe (Awadhi Pukki Style)

Gentle spice. Rice cooked in stock. Pure aroma.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Lucknowi biryani is the opposite of a fiery Karachi biryani: no tomato, very little chilli, and rice cooked in the meat's own stock (yakhni) so every grain carries flavour. Most home versions go wrong by adding too much masala. This recipe keeps it light and aromatic, the way the Awadhi kitchens intended.

The 3 laws of Lucknowi biryani

Why this recipe works

Yakhni

Plain boiling water

Rice is par-cooked in spiced mutton stock, so the flavour is in the grain.

Restraint

Heavy red masala

No tomatoes and only mild chilli. Aroma leads, not heat.

Itr and kewra

Strong food colour

Saffron, kewra and a touch of rose give the royal fragrance.

Look for: grains break in 3 with soft edges.

Layer and dum

High 3 min, then lowest on a tawa · 20 min
  1. Spread the korma, then the rice.
  2. Sprinkle saffron milk, kewra, rose water, ghee, mint and fried onions, plus ½ cup yakhni.

Chef's troubleshooter

What went wrong? Pick the symptom

Why

Karachi-style chilli and garam masala amounts were used.

Fix next time

Use mild Kashmiri chilli only and keep garam masala to 1 tsp. Aroma, not heat, is the goal.

Why

Rice was boiled in water, not yakhni.

Fix next time

Always boil the rice in the mutton stock and add ½ cup yakhni before dum.

Why

Mutton was fully cooked in the yakhni, then cooked again.

Fix next time

Stop the yakhni at 80% tender so the meat finishes in the korma and dum.

Why

Yakhni rice went past 75%.

Fix next time

Rice in stock cooks faster. Start testing 2 minutes earlier.

Why

Too much rose or kewra water.

Fix next time

Use ½ tsp rose water at most. Kewra and saffron should lead.

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (when is the rice ready to drain) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
