Kolkata Biryani Recipe (Bengali Style with Aloo and Egg)

Golden aloo. Soft egg. Light, fragrant rice.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Kolkata biryani is known for its whole golden potato, a boiled egg and rice that is subtle, slightly sweet and perfumed rather than spicy. The hard part is the aloo: it must be soft and full of flavour without breaking. This recipe fries and pre-cooks the potato in the meat's masala so it soaks up everything.
