Veg Biryani Recipe (Restaurant Style, 45 Minutes)
Vegetables hold shape. Bold masala. No mushy pulao.
Recipe by Farwa ZeeshanTested in the NineFoods home kitchenVeg biryani usually ends up as a soft vegetable pulao because every vegetable is cooked to the same point. This recipe cuts each vegetable to the right size, sears the firm ones first and adds the soft ones last, so carrots, beans, potatoes and peas all keep their bite through the dum.

Quick answers
Veg biryani FAQ
What vegetables are best for biryani?
Potatoes, carrots, green beans, cauliflower, peas and capsicum. Cut hard vegetables smaller so everything cooks evenly.
How do I stop veg biryani becoming mushy?
Sear firm vegetables first, add soft ones last, drain the rice at 70% and keep the dum short.
Is veg biryani the same as vegetable pulao?
No. Biryani layers par-cooked rice over a separate masala and finishes on dum. Pulao cooks rice and vegetables together in one stock.
Can I make veg biryani vegan?
Yes. Use oil instead of ghee and coconut yoghurt instead of dairy yoghurt.
