Karachi Beef Biryani Recipe (Spicy and Tender)

Soft beef. Bold masala. Every grain separate.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Beef needs far longer than chicken or mutton to soften, so a one-pot beef biryani always ends with tough meat or mushy rice. This recipe pressure cooks the beef until tender first, builds a sharp Karachi masala around it, and only then layers the rice for a short dum.

How we tested this recipe

Tested in a home kitchen, not a studio

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 5 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the beef ready to layer) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.

Quick answers

Beef biryani FAQ

Which cut of beef is best for biryani?

Bong (shank) or undercut with a little fat and bone. They turn soft and juicy, while lean steak cuts stay chewy.

How long does beef take to cook for biryani?

About 35 minutes in a pressure cooker or 2 hours simmered in a covered pot, until a fork slides through easily.

Can I make beef biryani without a pressure cooker?

Yes. Simmer the marinated beef covered on low with 2 cups water for about 2 hours, stirring occasionally.

Why is my beef biryani dry?

Usually because the beef masala was reduced too far or the dum ran too long. Keep a thick but moist masala and limit dum to 15 minutes.
