Kofta Biryani Recipe (Soft Meatball Biryani)

Soft koftas. Rich gravy. No broken meatballs.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Koftas break apart in biryani for two reasons: the mince is too wet, or they are stirred before they set. This recipe squeezes the onion dry, binds the mince with roasted gram flour, and lets the koftas set untouched in the simmering gravy before layering.

Quick answers

Kofta biryani FAQ

Why do my koftas break in the gravy?

The mince is too wet or they were stirred too early. Squeeze the onion dry and let the koftas simmer untouched until firm.

Should I fry koftas before adding them to the gravy?

It is optional. Simmering raw koftas in the gravy keeps them softer; frying gives a firmer crust.

What is the difference between kofta biryani and moti biryani?

Moti biryani uses tiny pearl-sized koftas. Kofta biryani uses larger, walnut-sized koftas in a richer gravy.

Can I make kofta biryani with chicken mince?

Yes. Add 1 tbsp yoghurt to the mix and simmer the koftas 12 minutes instead of 20.
