Step by step
Batter
- Grind urad fluffy and rice smooth, mix with salt.
- Ferment until doubled.
Potato masala
- Temper mustard, dals, curry leaves, chillies and ginger.
- Add onion, turmeric, potatoes, salt; finish with lemon.
Spread and crisp
- Pour a ladle in the centre and spread in quick circles.
- Drizzle oil, cook until golden, fill and fold.
