Cabbage thoran is finely shredded cabbage tossed with a crushed coconut, garlic and chilli mixture. It turns soggy when cooked too long with a lid. The fix is shredding the cabbage finely, cooking it briefly covered, then uncovering to dry so it stays bright and slightly crunchy.
