Gongura pachadi is Andhra's sour, fiery chutney made from sorrel leaves. It spoils quickly or tastes raw when the leaves are wet or undercooked. The fix is drying the washed leaves fully, cooking them in oil until they collapse into a dark paste, and topping with enough oil to seal.
