Ghee is butter simmered until the water evaporates and the milk solids toast, then strained. It gives a nutty aroma to biryani, halwa and daal, and keeps for months without refrigeration. The whole skill is knowing when to stop: when the foam clears and the solids at the bottom turn golden brown.

How to make ghee step by step

  • Melt 500 g unsalted butter in a heavy pan on medium-low.
  • Let it simmer without stirring; skim foam if you like.
  • Watch the solids at the bottom. Stop when they are golden brown and the ghee is clear.
  • Cool 5 minutes, then strain through a fine cloth into a dry jar.
