Masala dosa is a thin, crisp fermented crepe wrapped around spiced potato masala. It turns soft or tears when the batter is thick or the tawa is wrong. The fix is a well-fermented batter at pouring consistency, a hot seasoned tawa and a quick circular spread from the centre.

Grind and ferment · 10 hours
  1. Grind urad fluffy and rice smooth, mix with salt.
  2. Ferment until doubled.

  2. Add onion, turmeric, potatoes, salt; finish with lemon.
