Chocolate Spice Cake Recipe (Moist, with Cinnamon and Cardamom)

Moist crumb. Warm spice. Glossy ganache.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Dry chocolate cake comes from overbaking and too little fat or liquid. This recipe uses oil instead of butter, hot coffee to bloom the cocoa, and buttermilk for tenderness, then pulls the cake from the oven when a skewer shows a few moist crumbs. Cinnamon, cardamom and a pinch of chilli warm the chocolate without overpowering it.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 12 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the cake baked) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
