French Macarons Recipe (Smooth Tops, Full Feet, Buttercream)

Smooth tops. Ruffled feet. Chewy centre.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Macarons fail for three reasons: a batter mixed too little or too much, shells piped without resting, and an oven at the wrong temperature. This recipe weighs everything, folds the batter until it flows like lava in a ribbon, rests the shells until a skin forms, and bakes on a middle rack at a steady 150°C.

How we tested this recipe

Tested in a home kitchen, not a studio

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 24 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the batter folded enough) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.

Quick answers

French macarons FAQ

Why do my macarons have no feet?

The shells did not form a skin before baking, or the batter was over-mixed. Rest until the tops are dry.

Why are my macarons hollow?

Usually an over-whipped meringue or an oven that is too hot.

What is macaronage?

The folding stage where the dry mix is folded into the meringue until it flows like lava.

Why rest filled macarons overnight?

Maturing lets the filling soften the shells, giving the classic chewy centre.
