Qatayef Recipe (Ramadan Stuffed Pancakes)

Bubbles on top. Never flip. Seal while warm.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Qatayef are small pancakes cooked on one side only, filled with nuts or cream and folded into half-moons. They fail to seal when the top is cooked dry or the pancakes cool. The fix is a pourable yeasted batter, cooking only until the top is covered in bubbles and no longer wet, and sealing under a towel while still warm.

How we tested this recipe

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the pancake ready to lift) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
