Kaak Recipe (Saudi Date-Filled Cookies)

Rest the semolina. Soft date paste. Pale bake.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Kaak are semolina cookies wrapped around spiced date paste and baked until just set, served with Arabic coffee at Eid. They turn hard and crumbly when the semolina isn't rested or they're overbaked. The fix is rubbing ghee into the semolina and resting it overnight, then baking only until the bottoms are golden.

  • Cooked from start to finish with the exact quantities above for 12 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (are they baked) and the troubleshooter come from batches that went wrong, and how we fixed them.
