Saudi Saffron Fish and Rice Recipe (Sayadieh Style)

Flaky fish. Golden saffron rice. Sweet caramelised onion.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Fish and rice dishes fail when the fish is boiled into the rice and falls into shreds. The Gulf coastal way is to sear spiced fish fillets separately, cook the rice in a quick fish stock with saffron and caramelised onions, and lay the fish on top for the last few minutes so it steams gently and stays in flakes.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (how dark should the onions go) and the troubleshooter come from batches that went wrong, and how we fixed them.
