Potato Chap Recipe (Iraqi Stuffed Potato Croquettes)

Dry mash. Cooked filling. Chill before frying.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Potato chap are Iraqi croquettes: a shell of mashed potato wrapped around spiced minced meat, crumbed and fried, a Ramadan iftar favourite. They burst in the oil when the potato is wet or the patties are warm. The fix is drying the boiled potatoes, a cooked filling, and chilling the shaped chap before frying.
