Kleicha Recipe (Iraqi Date Cookies)

Soft dough. Warm date paste. Egg wash shine.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Kleicha are Iraq's national cookies, made for Eid: a soft cardamom and rose water dough rolled around date paste, sliced into spirals and baked with a shiny glaze. They crack or turn hard when the dough is stiff or the dates are cold. The fix is a soft, rested dough, warm pliable date paste and baking only until golden.

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 12 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (are they baked) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
