Shahi Tukray Recipe (Royal Bread Pudding with Rabri)

Fry crisp. Quick syrup dip. Thick rabri.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Shahi tukray is bread fried in ghee, dipped in syrup and covered in thick rabri, a Mughal dessert made for Eid. It goes soggy when the bread is not crisp or soaks too long. The fix is frying day-old bread slowly until golden through, a quick dip in warm syrup, and rabri reduced until really thick.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 8 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the rabri thick) and the troubleshooter come from batches that went wrong, and how we fixed them.
