Daal Mash Recipe (Lahori Dry Urad Dal)

Soak only 30 minutes. Measure the water. Stir gently.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Daal mash is the dry, buttery white lentil dish of Lahore's dhabas, where each grain stays whole and coated in ginger and chilli. At home it usually turns into a sticky paste. The fix is a short soak, an exact 1 to 2 water ratio so the lentils absorb everything, and folding rather than stirring once they soften.
