Aloo Bhindi Recipe (Okra and Potato Sabzi)

Dry the okra. Fry it apart. Salt at the end.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Aloo bhindi is okra and potato cooked dry with onion, tomato and spices, a summer staple with roti. The common complaint is slime. The fix is washing and fully drying the okra before cutting, frying it separately in hot oil until the edges brown, and adding salt and tomato only at the very end.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the okra fried enough) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
