Lobia Recipe (Pakistani Black-Eyed Bean Curry)

Soak overnight. Bhuno the masala. Mash a few beans.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Lobia is the everyday black-eyed bean curry of Pakistani homes, cooked in a bhuna onion and tomato masala until the gravy turns thick and creamy. It disappoints when the beans stay firm or the gravy is thin and watery. The fix is soaking the beans overnight, frying the masala until the oil separates, and mashing a ladle of beans back into the pot.
