Lahori dhaba style · One wok, no onions
Pakistani Chicken Karahi Recipe (Restaurant Style)
Thick masala. Juicy chicken. Zero watery gravy.
Recipe by Farwa ZeeshanTested in the NineFoods home kitchenHome karahi usually turns into a watery tomato curry because the tomatoes go in too early and the heat is too low. Real karahi is a fast, high-heat bhuna in a wok: the chicken sears first, the tomatoes collapse in their own juice, and the oil separates in under 30 minutes.
The 3 laws of karahi
Why this recipe works
Simmering on medium
Karahi is a stir-fry. Keep the flame high so moisture flashes off.
Onion and water base
Tomato, ginger and chilli only. Onion makes it a salan, not a karahi.
Serving while wet
Bhuna until the oil separates and the masala clings to the chicken.

Method · 4 stages
Step by step
Sear the chicken
- Heat the oil in a wok until it shimmers.
- Add the chicken and salt and fry, turning often, until the pieces turn white and lightly golden.
- Add ginger garlic paste and fry 1 minute until the raw smell goes.
Melt the tomatoes
- Place the tomato halves cut side down over the chicken.
- Cover and cook until the skins wrinkle and lift.
- Pick the skins out with tongs and discard.
Bhuna on high
- Mash the tomatoes into the chicken with your spoon.
- Add chilli flakes, black pepper, coriander, cumin and turmeric.
- Stir-fry on high, scraping the bottom, until the liquid is gone and oil separates.
Finish and serve
- Lower the heat. Add green chillies, julienned ginger and butter.
- Sprinkle garam masala and coriander, toss once and serve straight from the wok.
Chef's troubleshooter
What went wrong? Pick the symptom
Why
The heat was too low, or the tomatoes were not cooked down before serving.
Fix next time
Bhuna uncovered on high until the oil separates. Do not add water at any stage.
Why
The pieces were too large, or the chicken was overcooked after the bhuna.
Fix next time
Use small karahi-cut pieces and add the finishing ingredients the moment the oil rises.
Why
The tomatoes were very acidic and not cooked long enough.
Fix next time
Cook 3 more minutes on high, then add 1 tbsp butter. A pinch of sugar balances very sour tomatoes.
Why
Home burners do not reach dhaba wok heat.
Fix: dhungar
Put a small steel bowl in the wok, add a glowing coal and ½ tsp ghee, cover 2 minutes.
Why
The bottom was not scraped during the bhuna.
Fix next time
Scrape every 30 seconds. If it catches, add 2 tbsp water, scrape and finish quickly.
Swap smart

Quick answers
Chicken karahi FAQ
Is onion used in chicken karahi?
Traditional Lahori and Peshawari karahi uses no onion. The masala is built only from tomato, ginger, garlic and chilli.
What is the difference between karahi and handi?
Karahi is cooked fast on high heat in an open wok with a tomato masala. Handi is slow-cooked in a deep pot and finished with yoghurt or cream.
Can I make chicken karahi without a wok?
Yes. Use the widest heavy pan you have so the liquid can evaporate quickly. A deep pot traps steam and makes the gravy watery.
How do I make karahi less oily?
Use 80 ml oil instead of 120 ml, and spoon off any extra oil once it separates, before adding the butter.
