Lemon Pickle Recipe (Nimbu Ka Achar, No Mould)
Soft skins. Spicy oil. No mould.
Recipe by Farwa ZeeshanTested in the NineFoods home kitchenLemon pickle goes mouldy when there is any water in the jar or not enough salt, and it stays bitter when the skins are not cured long enough. This recipe dries the lemons completely, cures them in salt and turmeric until the skins turn soft and brown, and then finishes them with spiced mustard oil.
