Begun Bhaja Recipe (Bengali Fried Eggplant)

Thick slices. Rest the rub. Medium heat, covered.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Begun bhaja are thick eggplant slices fried in mustard oil, crisp outside and creamy inside, eaten at the start of a Bengali meal with rice and dal. They soak up oil or stay raw in the middle. The fix is resting the slices in salt and turmeric, using less oil, and frying on medium with a lid for the first few minutes.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 2 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (are the slices done) and the troubleshooter come from batches that went wrong, and how we fixed them.
