Beef shawarma at home won't spin on a rotisserie, but it can taste just as good. Home versions turn grey and chewy when the beef is cut thick or crowded in the pan. The fix is slicing the beef very thin across the grain, an overnight vinegar and yogurt marinade, and searing in small batches over high heat.
