Falafel falls apart in the oil when it is made from canned or cooked chickpeas, which are too wet and soft. Real falafel uses dried chickpeas soaked overnight and ground raw with lots of herbs. Ground to the texture of coarse sand, it holds together and fries into crisp shells with fluffy green centres.

Soak the chickpeas

Overnight
  1. Soak dried chickpeas in plenty of water overnight. Drain and dry well.
Look for: chickpeas doubled in size.

Grind

  1. Pulse chickpeas, herbs, onion, garlic and spices to coarse sand. Use the gauge above.
  2. Chill 30 minutes.
Look for: green, gritty mix that holds when squeezed.

Shape

  1. Stir in baking soda.
  2. Shape small patties or balls, and sprinkle with sesame.

Fry

175°C oil · 4 min per batch
  1. Fry in batches until deep golden.
  2. Drain on a rack and serve hot.
Look for: deep golden, crisp outside, green and fluffy inside.
