Kuwaiti Marag Al Khadaar Recipe (Vegetable and Meat Stew)
Tender lamb. Vegetables with bite. Rich tomato broth.
Recipe by Farwa ZeeshanTested in the NineFoods home kitchenMarag (stew) is everyday Kuwaiti comfort food, and al khadaar means with vegetables. The usual problem is mushy vegetables: everything goes in at once and cooks for an hour with the meat. This recipe softens the lamb first and adds the vegetables in two waves, so each one ends perfectly tender.
