Kuwaiti Eid sweet · Paper-thin and crisp
Kuwaiti Darabeel Recipe (Crispy Rolled Wafers)
Paper thin. Shatter crisp. Cardamom sweet.
Recipe by Farwa ZeeshanTested in the NineFoods home kitchenDarabeel are thin, crisp wafer rolls served at Kuwaiti Eid gatherings. They break when the batter is too thick or the wafer is rolled after it has cooled even a few seconds. This recipe gives a thin pouring batter and a quick roll-while-hot method so every roll stays whole and crisp.
The 3 laws of darabeel
Why this recipe works
Pancake-thick batter
The batter should coat a spoon thinly, like cream.
Medium pan
A hot flat plate sets the wafer in seconds.
Waiting to roll
Roll within 10 seconds of lifting. It sets crisp as it cools.
