It spoils quickly or tastes raw when the leaves are wet or undercooked. The fix is drying the washed leaves fully, cooking them in oil until they collapse into a dark paste, and topping with enough oil to seal.

Step by step
Roast spices
- Roast chillies, coriander, cumin and fenugreek in 1 tbsp oil; cool.
Cook leaves
- Cook gongura in remaining oil.
- Use the gauge above.

- Grind spices with garlic and salt, then pulse with leaves.
- Pour over a mustard, dal, garlic and curry leaf tempering.
