Pide is the boat-shaped bread of Turkish bakeries, filled with spiced mince, cheese or egg and brushed with butter straight from the oven. Home pide often has a soggy middle and boats that open flat. The fix is a dry cooked filling, folding and pinching the ends firmly, and baking on a hot tray.
