Lahmacun Recipe (Turkish Thin Meat Flatbread)

Thin as paper. Raw topping, thin layer. Hottest oven.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Lahmacun is a paper thin flatbread spread with a raw paste of minced lamb, peppers, tomato and spices, baked fast and rolled up with parsley, onion and lemon. At home it comes out thick, soggy or dry. The fix is rolling the dough until you can almost see through it, spreading the topping thinly right to the edge, and baking on a preheated tray in the hottest oven.

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the lahmacun done) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
