Mutanjan is the richest of Pakistani sweet rice dishes: multicoloured grains layered with khoya, cham cham, nuts and plenty of ghee. It fails when colours bleed into one dull shade or the rice turns sticky. The fix is colouring the par-boiled rice in separate batches and finishing on a long, gentle dum.
