Step by step
Fry the onion
- Heat ghee and fry sliced onion until golden.
- Lift out half the onion for garnish.
Bloom the masala
- Add ginger garlic paste and fry 1 minute.
- Add nihari masala, chilli, turmeric and a splash of water and fry until fragrant.
Sear and simmer
- Add chicken and salt, fry 5 minutes.
- Pour in hot water, cover and simmer gently. Use the gauge above.
Thicken
- Whisk toasted atta into water until smooth.
- Pour slowly while stirring and simmer until glossy.
Tarka
- Heat ghee with a pinch of masala and pour on top.
- Garnish with ginger, chillies, coriander and fried onion.
