Pakistani chicken korma is the rich, red, oil-topped curry served at weddings. Home versions often turn out grainy, pale or sour. The secret is crushed fried onions (birista) for colour and sweetness, yogurt whisked smooth and added off the heat, and a slow dum at the end.
