Kofta korma is soft spiced meatballs simmered in a korma gravy. The common failure is kofte that break apart in the pot or turn hard. The fix is well-kneaded mince with a little roasted gram flour, chilling the balls, and adding them to simmering gravy without stirring for 10 minutes.
