Chana chaat is the tangy chickpea salad on every Pakistani iftar table. It tastes flat when the chickpeas are firm or the chaat sits too long. The fix is soft chickpeas, a balance of sweet imli chutney and sharp lemon, plenty of chaat masala, and mixing right before serving.
