Papri Chaat Recipe (Crisp Wafers with Yoghurt and Chutney)

Crisp papri. Thick dahi. Build last minute.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Papri chaat is crunchy fried wafers piled with potatoes, chickpeas, sweet yoghurt and two chutneys. It goes soggy within minutes if assembled early. The fix is frying papri until fully crisp, keeping yoghurt thick and cold, and building each plate only when you are about to eat.

How we tested this recipe

Tested in a home kitchen, not a studio

Farwa Zeeshan

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 2 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (are the papri crisp) and the troubleshooter come from batches that went wrong, and how we fixed them.
  • Reheating and storage advice was checked on leftovers, not guessed.
