Mango Pickle Recipe (Aam ka Achar)
Sour kairi. Sun-dried pieces. A week to mature.

It spoils when there is any moisture, and tastes harsh when eaten too soon. The fix is drying the mango pieces in the sun or air for a few hours, using plenty of salt and oil, and resting the pickle for a week.

Method · 4 stages
Step by step
Salt the mango
- Cut mangoes with the stone into chunks, toss with salt and turmeric.
- Rest 6 hours, then pour off the juice.
Air-dry
- Spread pieces on a cotton cloth until the surface is dry to touch.
Spice oil
- Heat mustard oil until it smokes, cool until warm.
- Stir in crushed mustard, fennel, nigella, fenugreek, chilli and hing.
Jar and mature
- Pack mango into a dry jar, pour the spice oil over to cover.
- Shake once a day.
