Rogan josh is Kashmir's deep red lamb curry, coloured by Kashmiri chilli and flavoured with fennel, dry ginger and asafoetida, with no onion or tomato in the traditional Pandit style. It goes wrong when the yogurt curdles or the colour turns brown. The fix is whisking yogurt with the spices and adding it off the heat, and keeping the chilli from burning.

  2. Return to low and cook until oil separates.
