Firni Recipe (Afghan Milk Pudding with Cardamom and Rosewater)

Slake the starch. Stir constantly. Rosewater last.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Afghan firni is a smooth, wobbly milk pudding with cardamom and rosewater, set in bowls and scattered with pistachios for Eid. It turns lumpy or tastes of raw starch when the cornflour is added straight to hot milk. The fix is mixing the cornflour with cold milk first, stirring constantly, and cooking it for a few minutes after it thickens.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is it thick enough) and the troubleshooter come from batches that went wrong, and how we fixed them.
