Pressure cook
- Cook soaked urad and rajma with water and salt until very soft.
Masala
- Melt 2 tbsp butter, fry ginger garlic, add tomato puree and chilli.
- Cook until oil separates.
Slow simmer
- Add dal, simmer, stirring and mashing often.
- Use the gauge above.
Finish
- Add remaining butter, cream, garam masala, methi.
- Optional: smoke with hot charcoal and ghee for 3 minutes, covered.
